Australia’s native edible flora is an important component of “bush food”. Species of edible flora are gaining greater public awareness, thanks to Indigenous bush cooking initiatives, commercial bush food enterprises and the increasing use of bush food ingredients by high-profile chefs. This stamp issue presents three native Australian fruit varieties from the citrus family (Rutaceae), including two from the genus Citrus and one from the genus Acronychia. There is an outback species: Desert Lime (Citrus glauca), which produces a very small fruit that can be used like a regular lemon or lime – a key difference being its thinner peel. There are also two rainforest species: Lemon Aspen (Acronychia acidula), which has a very small fruit with a tart flavour, much like that of a grapefruit, and the aptly named Australian Finger Lime (Citrus australasica). The Finger Lime’s fruit contains caviarshaped, citrus-flavoured pearls.
